Lemon & Ginger Fizz

  • 1 tbs fresh lemon juice
  • 2 x 4cm strips of lemon rind, white pith removed
  • Ice cubes, to serve
  • 30ml brandy
  • Chilled ginger beer, to serve

Place the lemon juice and lemon rind in a chilled serving glass. Fill two-thirds of the glass with ice cubes. Add the brandy and top with ginger beer. Stir until well combined. Serve.
