Iced Lemon Ginger Tea

  • 4-inch piece fresh gingerroot
  • 6 cups water
  • 1/2 cup honey
  • 1/2 cup sugar
  • Zest of two lemons, removed with a vegetable peeler
  • 1 cup fresh lemon juice
  • Garnish: lemon slices

Peel gingerroot and cut crosswise into thin slices. In a medium saucepan boil water, gingerroot, honey, sugar, and zest, stirring, until sugar dissolves.
Remove pan from heat and steep "tea" covered, 45 minutes. Uncover tea and cool completely.
Remove gingerroot and zest with a slotted spoon and discard. Transfer tea to a pitcher and stir in lemon juice. (Chill tea, covered, until cold and up to 2 days.)
Serve tea over ice in tall glasses and garnish with lemon slices.
Recipe makes about 7 cups Iced Lemon Ginger Tea.

  • 5 tea bags
  • 1-inch piece of fresh ginger
  • Sugar, to taste

Ginger-Lemon Iced Tea

  • 3 medium lemons
  • 3/4 cup honey
  • 1 gallon cold water
  • 4 oz peeled fresh ginger, sliced paper thin

Scrub the lemons thoroughly under warm running water with a light liquid soap and an abrasive scrubber until squeaky clean. Slice in half crosswise. Add the water and ginger slices to a heavy non-aluminum pot. Holding each lemon half over the pot, extract as much juice and pulp as possible by vigorously twisting with a fork. Drop the pulped lemon halves into the pot. Bring to a boil over moderate heat, then immediately remove from the heat, cover, and let steep undisturbed for 30 minutes. Strain the tea through a fine-mesh strainer, and while it is still hot, stir in the honey. Let cool to room temperature, then chill in the refrigerator. Serve over ice and garnish with mint sprigs, or top with boiling water for a hot drink.

Iced Ginger-Lime Tea

  • 2 cups water
  • 1-inch piece fresh ginger root, peeled and chopped
  • 2 tbsp mild-flavored honey (more to taste)
  • 1/2 cup lime or lemon 1 juice
  • Ice cubes

Combine the water, honey, and ginger in a saucepan and bring to a simmer. Simmer 15 minutes and strain. Add the lime or lemon juice. Correct sweetening. Fill glasses with ice cubes and pour in the tea, or chill the ginger-water infusion and combine with the lemon or lime juice just before serving.
